Chili/Soup Cook-Off and Baking Contest
First Place Recipes

The first-place winners of the Mangum-Howell Center’s 2010 Chili/Soup Cook-Off and Baking Contest are pleased to share their winning recipes:

Lotus’s Chili

1 lb. each of ground chuck and ground chili meat
2 small onions (chopped)
3 cloves of garlic
2/3 cups bell pepper (chopped)
1/2 cups celery (chopped)
3 T. chili powder
2 small cans tomatoes
2 small cans tomato sauce

Combine onions, garlic, bell pepper, and celery with meat. Brown and cook meat for 20 minutes. Add tomatoes and tomato sauce. Simmer for 5 minutes and add chili powder. Cook for 20 minutes, add salt and pepper to taste.

 

Savory Beef Vegetable Soup

1 package Bear Creek minestrone soup mix
½ cup pasta
1 lb. ground beef
1 medium onion (chopped)
1 cup frozen broccoli
1 can corn (drained)
1 can ranch style beans
1 can Rotel
1 tsp. onion powder
1 tsp. garlic powder
1 tsp. black pepper

Sprinkle ground beef with onion powder, garlic powder, and pepper. Add onions and cook until well done. Drain well. On stovetop cook minestrone mix and pasta. Cook 3 minutes less than directed on package. Pour carefully into slow cooker. Add meat, broccoli, corn, beans, and Rotel to cooker. Cook on high for 3 hours. Serves 12.

        

Mississippi Mud Cake

4 eggs
2 cups sugar
2 sticks melted margarine
1½ cups sifted flour
1 teaspoon vanilla
1 cup coconut
1 jar marshmallow crème
1/3 cup cocoa

Combine eggs and sugar, beat until thick. Set aside. Combine melted margarine, flour, cocoa, vanilla, and coconut. Mix well and add to egg and sugar mixture. Pour into a greased and floured 13 x 9 inch pan and bake for 30 minutes at 350 degrees. Remove from oven, immediately spread top with marshmallow crème. Let cake set briefly. While cake is still warm, spread frosting over marshmallow crème.

Frosting
1 stick melted margarine
1/3 cup cocoa
1 tsp. vanilla
6 T milk
1 box powdered sugar
1 to 2 cups chopped nuts (walnuts or pecans)

Melt margarine and remove from heat. Add all other ingredients except nuts and beat well. Add nuts and mix.
